Mallorcan Ensaïmada
MALLORCAN ENSAIMADA WITH COD AND BLACK OLIVE CREAM

Ingredients
1 plain family-size Mallorcan ensaimada (with no sprinkled sugar) 1 brunoised onion 1 brunoised green pepper 1 brunoised red pepper 1 spoonful of tomato sauce or the pulp of a Choricero pepper 300g of flaked cod A pinch of chopped garlic Chopped parsley 1dl of extra virgin olive oil Black Mallorcan olives
Instructions
Cod filling: Sauté all the vegetables thoroughly on a low heat, then add the tomato sauce or pulp of the Choricero pepper, followed by the flaked cod. Leave it to boil for a few seconds. Season and sprinkle the parsley over it. Olive purée: Blend the black Mallorcan olives to make a purée.
Presentation
Slice the ensaimada through the middle horizontally. Spread the bottom half with the olive purée and place the cod filling on top. Close the ensaimada by placing the top on it.
